Colorful vegetable frittata with basil (vegetarian)
Preparation: Colorful vegetable frittata with basil (for 8 pieces or for 1 tart pan, approx. 24 cm ø)

Wash, halve, clean, and dice the bell peppers.

Peel and dice the onion and garlic.

Wash and finely dice the zucchini and eggplant.

Wipe the mushrooms with a damp towel and slice them.

Whisk the eggs and season with salt, pepper, and oregano.

Preheat the oven to 160 °C convection.

Grease a tart pan (approx. 24 cm ø) with butter.

Heat the olive oil in a pan and lightly brown the eggplant and mushrooms.

Add the remaining vegetables and fry for approx. 5 minutes, tossing occasionally.

Season with salt and pepper.

Spread the contents of the pan into the dish and pour the eggs over top.

Bake in the oven for approx. 35 minutes until the egg mixture is set (toothpick test).

During the last 10 minutes, dollop the cream cheese over top by the teaspoonful.

Serve the frittata while still warm, garnished with basil leaves.
