Dissolve the yeast in 140 ml of cold water.

Mix together with the flour and salt in a bowl to form a relatively soft dough.

Cover with plastic wrap and let rise in the refrigerator overnight for about 10 hours.

The next day, fold the dough twice into a parcel on a floured surface (stretch it into a rectangle with your hands each time and then fold the sides loosely toward the center).

Then cover with a kitchen towel and let rise for another 40 minutes.

Preheat the oven to 250 °C top and bottom heat. Line a baking sheet with parchment paper.

Divide the dough into 8 pieces using a dough scraper or spatula and briefly shape each into a round ball.

Place on the baking sheet, brush with water, and sprinkle with sesame seeds.

Bake in the oven for 10-12 minutes (toothpick test), then allow to cool on a wire rack.

Sort, wash, and shake dry the arugula. Wash the tomato and cut into slices.

Rinse the chicken breast fillet, pat dry, cut into 8 strips, season with salt and pepper, dip in beaten egg white, and then coat in cornflakes. Press the breading on firmly.

Heat oil in a pan and fry the meat for 3-4 minutes until browned, turning occasionally.

Slice the burger buns horizontally and open them up.

Top with arugula and tomato, place a chicken strip on each, drizzle with barbecue sauce, and serve.
