Carrot and zucchini fritters (vegetarian)
For the dip:
Preparation: Carrot and zucchini fritters (4 servings)

Peel the carrots, wash and trim the zucchini, finely grate both, and then squeeze out slightly in a towel.

Wash and clean the green onions and slice them into thin rings.

Wash and clean the chili pepper and finely dice it.

Mix with the carrots, zucchini, and green onions in a bowl.

Mix in the chickpea flour, eggs, and quark, and season the mixture with salt, pepper, and nutmeg.

For the dip, wash the herbs, shake dry, and finely chop.

Stir the yogurt with lemon juice, salt, and pepper until smooth, then fold in the herbs.

Heat 3 tbsp oil in a large skillet, add approx. 3 tbsp of the mixture per fritter, flatten, and fry on each side for approx. 4 minutes until golden brown.

Drain the fritters on paper towels and serve on plates with the dip.

Garnish everything with parsley and carrot strips, then serve.
