Fitness recipe ingredients
Mexican veggie burger with bean and quinoa patty and vegetables (vegan, 4 servings)

Rinse the quinoa in a sieve with cold water and drain.

Cook in boiling salted water over low heat for approx. 15 minutes.

Meanwhile, mix the flaxseed with 2-3 tbsp of hot water and let it swell.

Peel and finely dice the onion and garlic. Sauté in a pan in 1 tbsp of olive oil for 2-3 minutes until translucent.

Allow to cool slightly and finely puree with the beans in a food processor. Transfer to a bowl.

Drain the quinoa and add it along with the locust bean gum and flaxseed.

Mix everything thoroughly and season to taste with salt, pepper, and cumin. Chill the mixture in the refrigerator for approx. 15 minutes.

Trim the red cabbage, cut into fine strips, mix in a bowl with a pinch of salt, sugar, and raspberry vinegar, and let marinate.

Wash the tomatoes and slice them. Pick through the arugula and cilantro, wash, and shake dry. Remove any woody stems.

Form four patties from the bean-quinoa mixture and fry in a non-stick pan in the remaining oil for 2-3 minutes per side.

Slice the buns in half and spread mustard on the bottom halves.

Then top each with a patty, arugula, cilantro, and tomatoes.

Top with red cabbage, place the top bun on, and serve.
