Wraps are thin flatbreads that are topped as desired and then rolled up. The whole-grain version is rich in dietary fiber, keeping you full for a long time and reducing afternoon cravings for sweets. Mix the spelt flours with the salt, add 125-150 ml of lukewarm water, and knead everything into a smooth dough using the dough hooks of a hand mixer.

Wrap in plastic wrap and let rest for at least 15 minutes.

Meanwhile, for the filling, trim the beans and blanch in boiling salted water for about 6 minutes until al dente, drain, rinse with cold water, and drain well.

Rinse the cress and let drain.

Divide the dough into 4 portions and roll each out as thinly as possible on a floured work surface into a flatbread.

Cook individually one after the other in a non-stick pan without fat over high heat briefly on both sides until lightly browned.

Stack on a plate and cover with aluminum foil to keep warm.

Fry the eggs in hot oil in a pan to make sunny-side up eggs, flip, and cook briefly on the yolk side until the yolk begins to set.

Melt the butter in a second pan and warm the beans in it, seasoning with salt, pepper, and savory.

Top the wraps with the turkey ham, distribute the eggs and beans on top, and roll up tightly.

Cut each diagonally in half, place on plates, and serve garnished with cress.
