Pit and chop the dates.

Roughly chop 2 tbsp of almonds, cacao nibs, and freeze-dried strawberries in a blender, remove, and set aside.

Finely blend the remaining almonds into a powder.

Add the dates and pulse blend in short bursts, adding the coconut oil, 2 tbsp water, cinnamon powder, vanilla bean seeds, and sea salt.

Mix in the chopped almonds, cacao nibs, and strawberries, and process everything into a moldable mixture. Add a little more water if needed.

Form 12-15 balls from the mixture, place in truffle liners if desired, and serve.
